Raspberry Smash Cocktails
Herbed Crêpes with Smoked Salmon and Radishes
Lobster, Avocado, and Grapefruit Salad
Fillaboa Albariño 02
Venison Tenderloin with Madeira Green Peppercorn Sauce and Parsnip Crisps
Carrot and Celery-Root Purées
Château Calon-Ségur St.-Estèphe '96
Frozen Praline Soufflés
Disznókö Tokay 6-Puttonyos '97
GAME PLAN
1 day ahead
• Make herbed crêpes and cheese mixture
• Boil lobster and remove meat from shell
• Make dressing for salad
• Make parsnip crisps
• Make carrot and celery-root purées
• Make praline soufflés
Day of meal
• Macerate raspberries for cocktails
• Assemble herbed crêpes
• Cut grapefruit segments and avocado for salad, and assemble salad
• Recrisp parsnip crisps in oven
• Roast venison and make Madeira sauce
• Reheat purées
